The Chocolate Passion
has been developed by Moleskine with the renown chef patissier
Ernst Knam as
an editorial advisor. With its 240 pages, a double expandable inner pocket and
a history booklet on Moleskine, it features the iconic Moleskine features such
as round corners and an elastic closure. The acid free paper ensures that the
journal will preserve memories for a lifetime. This new piece joins the
Passions Collection, with other 16 titles being

Ernst Knam, Chef patissier who assisted Moleskine in developing the
Chocolate Passion notebook, is author of various publications on cooking and
pastries and has worked as commis patisser in various important restaurants
worldwide: Restaurant Eagles Nest, 1 Michelin star, restaurant Terrazze, 2
Michelin stars, Restaurant Le Cygne, 2 Michelin stars and began working in 1992
as chef patissier in Milan in the restaurant of Gualtiero Marchesi, 3 Michelin
stars. He won three Toque d'ore competitions and gained various first places in
