On the occasion of this edition, Ernst Knam, chef patissier, curator of the editorial content, has created a brand new recipe: the Moleskine Praline, that can be found inside the notebook.

Designed to host notes, clippings, drawings, recordings and thoughts generated by one's passion for chocolate, the Chocolate Journal includes: a set of themed page layouts, 4 tabbed sections to fill-in, a map of cacao varieties, a glossary, space for your recipes, chocolate events, blank pages to take notes on, and over 200 adhesive labels to personalize and mark your notebook with.

The Chocolate Journal assists you in organizing, recording and sharing your notes on chocolate. It provides space to analyze in detail and explore the characteristics of each savour, becoming a tool to let your senses thrive.
The Passions Chocolate Journal offers summary sheets to fill in on each type of chocolate you taste with a graph that lets you assess how balanced the flavor is. Through a useful measuring and conversions table, you can write down your own personal chocolate recipes, from the ingredients to the final garnish, and organize them by writing them in the notebook's index. The Chocolate Passion has been developed by Moleskine with the renown chef patissier Ernst Knam as an editorial advisor. With its 240 pages, a double expandable inner pocket and a history booklet on Moleskine, it features the iconic Moleskine features such as round corners and an elastic closure. The acid free paper ensures that the journal will preserve memories for a lifetime. Ernst Knam, Chef patissier who assisted Moleskine in developing the Chocolate Passion notebook, is author of various publications on cooking and pastries and has worked as commis patisser in various important restaurants worldwide: Restaurant Eagles Nest, 1 Michelin star, restaurant Terrazze, 2 Michelin stars, Restaurant Le Cygne, 2 Michelin stars and began working in 1992 as chef patissier in Milan in the restaurant of Gualtiero Marchesi, 3 Michelin stars. He won three Toque d'ore competitions and gained various first places in cooking and pastry competitions around the world.
